Spring is definitely my favourite time of the year. The trees are budding, flowers blooming, the misery of winter fading… It feels like a second chance, a brand new beginning… and happiness. Spring is the time to get rid of the ‘old’ and make room for the ‘new’. That includes swopping those heavy winter comfort dishes you’ve gotten a bit too attached to, for lovely fresh and light meals for a new season and a smaller waistline…

I’ve found some mouth-watering recipes online made with fresh, in-season ingredients that you simply have to try… They’re not only delicious, but healthy too, and will definitely be a hit with your family and friends.

Grilled chicken burger with red cabbage coleslaw

We love burgers right? Well, here’s a healthier option for you… Instead of the traditional heavy double beef, bacon and cheese, swop it for a light protein such a chicken, and coleslaw and fresh peppery rocket for toppings.
