What exactly is a deep fryer? And how does it work?

A deep fryer (also known as a fryer or deep fat fryer) is used for deep frying a multitude of food stuffs in hot oil. What should you consider when purchasing a deep fryer?

As with all kitchen appliances, home or commercial, there are several other things to consider. Below we have listed such points worthy of consideration and although they may have commercial application, they are specifically written from the household-use point of view.

Use

It’s important to maintain the oil’s temperature as per the recommendations of the manual or recipes followed. At temperatures above 200°C, even the finest oil will begin to smoke.
Add food to your fryer, bit-by-bit because the temperature will dip each time that new items are added. Fry in small batches to prevent overcrowding and quickly recover the optimal temperature.

Drain well. Paper towels or brown paper bags have traditionally been used with food that’s been cooked in hot oil to absorb the excess. A more efficient and “tastier” method, however, is to use a cooling rack.

Salt deep fried food immediately, while hot; optionally use pepper or other spices.
Oil can be purified by deep-frying parsley – parsley absorbs odours in the oil.
Contrast textures – deep fried food (i.e. calamari or croûtons) on salad are a classic combination, tempura prawns in soup is a common delight in Japan.
